Answer:
Option 1: Change the printer driver!!!
Instead of using the driver downloaded from HP.com or from the manufacturer's CD - I used the Microsoft XP built-in driver for HP Business InkJet 2200/2250 (HPA) (slightly different model as you see - same functionality though…)
Worked like a charm! No more messages, that the cartridges have expired, when trying to print from a computer.
Make sure to delete the original HP driver first, before installing the one from MS - for the HP BIJ 2200/2250. Ignore any MS OS warnings, that this driver might not work.
Option 2:
Since the date chips look at the computer clock, all you need to do is set it back one year. You can always return it after you’re done printing. Bit of an inconvenience, but you'll get the most out of the cartridges. HP claims it chips them because expired cartridges can damage the printer. What a kind-hearted company, concerned you might damage your printer and then you wouldn't need to purchase more of their overpriced ink cartridges.

never heard of that before i have had hp lexmarks and the others and never came accross that may be your ink is dried up .just replace the ink and u should be fine
